Yes it's always best to try to take an overview. Whichever you use is a compromise which compromise is best I'm not sure.

A bit of sensor info, the overheating warning light reacts at 112-118c the fan cut in temp is 90-94c cut out 85-89c assuming good sensors of course!
Thermostat starts to open at 78-82c but is not fully open until 95c.
